My husband’s family has an incredible breakfast repertoire. Grandpa was a baker. Dad was a baker. And my husband has their genes. One of his all time favorite family recipes is Grandpa’s Cornmeal Waffles. They are incredible. And full of gluten and dairy. We have been working on modification experiments for months. So happy to have a tried and true recipe base!! It is the perfect host for all kinds of mix-ins and flavor variations. Go wild with your favorite flavors. Our favorites have been blueberry & lemon and pumpkin with pie spices.

It’s raining today. Summer is taking a nap. And I’m craving Chicken Divan. Rich, creamy, cheesy. I could eat a whole pan on my own. No joke. I mean, have you had Chicken Divan? The very week my doctor said I could add goat dairy into my diet, we had Chicken Divan for dinner. It’s in our meal plan for once every other month. I would do it more often but I don’t want to get sick of it. (Have I told you? I tend to be an obsessive lover of things to the point of overload and then the love is gone. For example, I’ll play a favorite song on repeat over and over until suddenly I can’t bear hearing it ever again. Except Nara by E.S. Posthumus. Somehow that song has stood strong against my fickle love. Listening to it right now in fact.)

Buying a whole butternut is a big commitment. I hate, deeply hate, when food gets wasted. When I buy a butternut pumpkin, we’re going to eat the whole thing. Whether we like it or not. So my challenge is to find ways to use some core ingredients over and over in a week but produce dishes with different flavors. (Part of a larger quest to find 31 great meals for each season on the year.)

Meal #2: is one of my childhood favorites: Shepherd’s Pie! My Granny made the most amazing Shepherd’s Pie. I have wonderful childhood memories of her delicious creamy potatoes and savory meat on cold winter nights. She, of course, used farm-woman ingredients: butter and cream.
