GF DF SF Butternut & Broccoli Shepherd’s Pie

Shepherds Pie Square Buying a whole butternut is a big commitment. I hate, deeply hate, when food gets wasted. When I buy a butternut pumpkin, we’re going to eat the whole thing. Whether we like it or not. So my challenge is to find ways to use some core ingredients over and over in a week but produce dishes with different flavors. (Part of a larger quest to find 31 great meals for each season on the year.)

This week’s core ingredients: Butternut Pumpkin and Broccoli

Meal #1: Coconut Quinoa Bean & Veg Casserole

Meal #2: is one of my childhood favorites: Shepherd’s Pie! My Granny made the most amazing Shepherd’s Pie. I have wonderful childhood memories of her delicious creamy potatoes and savory meat on cold winter nights. She, of course, used farm-woman ingredients: butter and cream. Coconut Quinoa SquareThe things we learn as children are the things we rely on as adults.  Our childhood becomes a foundation for an instinctual autopilot of sorts.  A failsafe.  A default set of assumptions that we rely on every day.  For our actions and reactions.  For every day relationships and for uncommon encounters with danger.  For our basic habits and for our fight or flight response.  And most people just live life without ever giving things a second thought.

“No matter what side of the car the driver’s seat is on, keep your body in the middle of the road,” Dad was preparing me for international driving.  “The driver is always in the middle and the passenger side is always to the curb.”

(Note: He is right.  Except when you change sides of the road when you drive from a country like Thailand into a country like Burma.  But that’s a whole other conversation.  And if you’re driving from Thailand to Burma, you’ll be worrying about bigger things than oncoming traffic. Merciful Days: When There Is Pain

Pain squareTheir giggles should have brought me joy but this morning I desperately needed silence.  Pain has wrapped me up.  Out of nowhere all my symptoms are back.  Such is life with chronic illness.  I asked my babies to “please stop” and play a quiet game instead. Their sweet blue eyes welled up with tears. Now my heart hurts just as much as my body does.

It is so deeply frustrating.  Because there is literally nothing I can do to change this. [Continue…]

Merciful Days: My Father

my father square“Have you asked God about it?” My dad’s kind and gentle eyes looked right into my heart.

He could have shouted, “NO WAY!”
He could have declared, “No daughter of mine will have a pierced eyebrow!”
He could have pleaded, “Please don’t.”

I was prepared for all of those scenarios.

Merciful Days: The Unbeautiful Beautiful

Beautiful squareSimple streamers floated in the breeze.  Free Burger King crowns sat in an awkward pile.  Sidewalk chalk sticks dotted the driveway.  This was no Pinterest-worthy project.  No hand-made guest party favors.  No cutesy photo-booth props.  No fabulous fondant wrapped cake.  And yet, it was utterly beautiful.
